Chefs from Gibraltar, Netherlands, Sweden and the UK joined forces on Wednesday 18 October for an International Chef Exchange dinner hosted at the Wessex Lounge in Gibraltar.

The event was hosted by Vicky Garcia-Bishop, one of Gibraltar’s leading chefs and food champions, with guest chefs Bas Oonk from Basaal in The Hague, Katja Palmdahl from Lilla Spinneriet in Gothenburg and Eliott Buchet from Jeremy’s Restaurant in West Sussex.

Vicky previously participated in a dinner at Restaurant Basaal on Bierkade back in July during The Hague Food Festival. Now trading for over 15 years, Restaurant Basaal is the only Michelin Bib Gourmand restaurant in The Hague.

“This is my fifth chef exchange”, said Basaal’s chef-patron Bas Oonk. “We’ve previously hosted a number of chefs from the UK, Sweden, the Channel Islands, Spain and most recently Vicky”.

“I find working with other chefs on a dinner like this is really inspirational”, he continued. “There’s plenty to learn in terms of new techniques and different ingredients. I’ve picked up some great tips on producing ice cream using a thermomix which I’ll be taking back to use at my restaurant”.

Over 80 guests enjoyed a four course dinner with matched wines, with each chef taking a course and preparing a welcome snack. The event also supported two local charities.

There are three key objectives to the chef exchange project. Firstly to promote reciprocal partner regions as gastronomic tourism destinations, secondly to create opportunities to promote local and artisanal food and drink with a view to export, and thirdly to allow chefs and hospitality businesses to share best practice through learning techniques and sharing knowledge.

“Its really good for our business too in terms of getting Basaal’s name out there”, he continued. “So many of our regulars have enjoyed the dinners we’ve hosted in The Hague, in fact one customer has attended all of them”.
